Mom's Chocolate Chip Oatmeal with Nuts Cookies (cont.)

DIRECTIONS:
Belnd dry ingredients together well. Add shortening, egg, water, vanilla, and blend till creamy & smooth. Mix nuts, then chocolate chips, (at this point most mixers give way and it is easier to do by hand) fold in oats. Place spoonfuls onto greased cookie sheet and cook @ 375 degrees for 12 minutes.

Use "Real" vanilla (throw away the cheap imitation stuff). Hunt till you find the right oats. Quaker in the box is far too wimpy, I find them in the natural food aisle (Red's is the best). Substitute 1/3 of the shortening with peanut butter (carefull here though if you go to as much as a 1/2 sub it is good but makes it very hard to spoon out. Too dry!). Greas the pan with Crisco. Save the spray stuff for other occasions. Take out of the oven @10 minutes and let set on the cookie sheet till cool. (They may not look done at this point, but will continue to cook a little on the cookie sheet.) This will yeild a soft and chewy cookie as opposed to a crumbly cookie. For a real treat substitute Black Walnuts for the pecans. Enjoy! |
